Method
Cut 0.5 cup cold cubed butter into the dry ingredients using a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized pieces remaining.
Stir in 1 egg yolk and 1 tsp vanilla until a soft, slightly sticky dough forms. If too dry, add 1 tsp cold water.
Press dough evenly into the bottom (and slightly up the sides, about 1/4") of the prepared springform to form a compact crust.
Bake crust for 12–15 minutes until lightly golden. Remove and let cool slightly while preparing the filling.
Vanilla Bean Cheesecake Filling
Reduce oven temperature to 325°F (160°C). Place a shallow roasting pan in the oven (for a later water bath).
Ensure the 24 oz cream cheese is fully softened. In a large bowl or stand mixer fitted with paddle, beat cream cheese on medium speed until very smooth and free of lumps, about 2–3 minutes.
Add 1 cup granulated sugar and 1 tbs vanilla bean paste and beat until combined and silky, scraping bowl as needed.
Add eggs one at a time on low speed, mixing just until incorporated—overbeating will introduce air. After eggs, mix in 0.5 cup sour cream, 0.25 cup heavy cream, 1 tbs flour and 0.25 tsp salt until smooth. Do not overmix.
Pour batter over the pre-baked sugar cookie crust and smooth the top with an offset spatula.
Bake at 325°F (160°C) for 55–70 minutes until the edges are set and the center still slightly wobbles (about 3/4" wobble). Avoid overbaking to keep the airy, creamy texture.
Turn off oven, crack the oven door and let cheesecake cool inside for 45 minutes to reduce the chance of cracks. Then remove from oven and water bath, unwrap foil, and cool completely on a rack for 1 hour before refrigerating.
Refrigerate the cheesecake (still in springform) for at least 6 hours, preferably overnight, to fully set and develop flavor.
Salted Popcorn Chocolate Bark
Line a baking sheet with parchment. Spread 2 cups popped popcorn in a thin even layer, discarding any unpopped kernels.
Gently melt 6 oz dark chocolate with 1 tsp oil or melted butter in a double boiler or in 20–30 second bursts in the microwave, stirring until smooth.
If using milk chocolate for marbling, melt it separately until smooth.
Drizzle or spoon the melted dark chocolate evenly over the popcorn, ensuring most pieces get coated but not completely buried. Use the milk chocolate to add a few streaks if desired.
Sprinkle 0.5 tsp sea salt flakes over the chocolate-coated popcorn while the chocolate is still wet.
Allow the bark to set at room temperature (~30–60 minutes) or speed up in the refrigerator for 20 minutes. Once set, break into small pieces (roughly 1/2"–1" chunks). Reserve a handful for garnish.
Caramel Sauce (Chef-crafted)
Cook until sugar turns an amber color (watch closely, about 6–10 minutes). If crystals form on the sides, brush them down with a wet pastry brush.
Slowly whisk in 0.5 cup warm heavy cream until smooth. If any lumps form, return briefly to low heat and whisk until smooth.
Stir in 0.5 tsp sea salt and 0.5 tsp vanilla. Let cool to room temperature; sauce will thicken as it cools. Reserve about 1/4–1/2 cup for drizzling over each slice and the remainder to blanket the top of the cheesecake.
Finishing & Assembly
When cheesecake has chilled and set, run a thin knife around the edge to loosen and remove the springform ring. Transfer cheesecake to a serving plate if desired.
Spoon the majority of the cooled caramel sauce over the top of the cheesecake and use an offset spatula to gently spread, leaving the edges exposed if you prefer. Reserve about 1/4 cup caramel for individual slices.
Press the popcorn chocolate bark pieces into the caramel layer on top of the cheesecake so they adhere; scatter remaining bark pieces decoratively. Add a few extra pieces of plain popcorn for height and texture.
Lightly sprinkle 0.25 tsp sea salt flakes over the top to heighten flavor contrast.
Chill assembled cheesecake for at least 30 minutes to let the caramel set. Before serving, optionally pipe or dollop 1 cup whipped cream around the edges.
Slice with a hot, dry knife (dip in hot water and wipe between cuts) and drizzle reserved caramel over each slice. Serve chilled.
