Mix dry ingredients
In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

Combine wet and dry
Pour the wet mixture into the dry ingredients and fold gently with a spatula or whisk until just combined. Do not overmix — some small lumps are fine and keep the cake tender.

Bake
Pour the batter into the prepared pan and smooth the top. Bake in the preheated oven for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs but not wet batter. Remove from oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Add jam swirl
When batter is in the pan (before baking) spoon small dollops of berry jam over the top — about 2–3 teaspoons spaced evenly. Use a skewer or knife to gently swirl the jam into the top third of the batter to create marbling. If using lemon zest, sprinkle it into the jam before swirling for a bright lift.

If you prefer a post-bake filling, warm the jam slightly (10–15 seconds in the microwave) to loosen it and spread thinly over the cooled cake center before glazing.

Make lemon glaze
Whisk the powdered sugar and lemon juice together in a small bowl until smooth. Adjust consistency: add more lemon juice, a drop at a time, for a thinner glaze or a bit more powdered sugar for a thicker drizzle.

Glaze cake
Place the cooled cake on a serving plate and spoon the glaze over the top, letting it drip down the sides. Use the back of the spoon to spread if needed.

Garnish
Scatter fresh berries or a few mint leaves over the glazed cake for color and freshness. Let the glaze set for 10–15 minutes before slicing.
