    Prepare the Filling

    In a large bowl, combine the ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are fully incorporated.

    Assemble the Gyoza

    Place a gyoza wrapper in the palm of your hand. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges of the wrapper with water, fold it in half, and pinch to seal, creating pleats if desired. Repeat until all filling is used.

    Cook the Gyoza

    Heat a large non-stick skillet over medium heat and add a tablespoon of oil. Arrange the gyoza in the skillet in a single layer and cook for 2-3 minutes until the bottoms are golden brown. Add about 1/4 cup of water to the skillet and cover with a lid. Steam the gyoza for about 5 minutes or until the water has evaporated and the gyoza are cooked through.

    Serve

    Transfer the cooked gyoza to a serving platter and serve hot with ponzu sauce on the side for dipping.
