Cooking Instructions
- 1
Cook the Pasta
Bring a large pot of salted water to a boil. Add the mezze maniche pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the pancetta or guanciale and cook until crispy, about 5-7 minutes.
- 3
Add Tomato Sauce
Stir in the tomato sauce and red chili flakes. Cook for another 5 minutes, allowing the flavors to meld together. Season with salt and black pepper to taste.
- 4
Combine Pasta and Sauce
Add the drained pasta to the sauce, tossing to combine. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- 5
Serve
Remove from heat and stir in grated Pecorino Romano cheese. Serve immediately, garnished with extra cheese and black pepper.
