Prepare the Beef
In a bowl, combine the finely diced beef tenderloin with chopped capers, cornichons, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper. Mix gently to combine all the ingredients.
Assemble the Tartare
Place the beef mixture in the center of a chilled plate, shaping it into a mound. Make a small indentation in the center for the quail egg.
Add the Quail Egg
Carefully crack the quail egg and place the yolk into the indentation of the beef tartare.
Garnish and Serve
Top the tartare with finely shaved black truffle and sprinkle with chopped parsley for garnish. Serve immediately with toasted bread or crackers on the side.
