Prepare the Piadina
In a large bowl, mix 2 cups of all-purpose flour with 1 tsp of salt and 1/2 cup of warm water. Knead until smooth, then let rest for 30 minutes.

Cook the Piadina
Divide dough into 4 pieces, roll each into a circle about 1/8 inch thick. Cook in a hot skillet for 2-3 minutes on each side until lightly browned.

Arrange the Charcuterie and Cheese
On a large serving platter, arrange slices of prosciutto, salami, and capicola. Add chunks of gorgonzola, parmesan, and mozzarella.

Scatter olives and cherry tomatoes around the meats and cheeses. Garnish with fresh basil leaves.
