Prepare the Fish
Season the seabass fillets with salt and black pepper on both sides.

Set Up Breading Station
Place the all-purpose flour in one shallow dish, beat the eggs in another shallow dish, and put the breadcrumbs in a third dish.

Bread the Fish
Dredge each seabass fillet in flour, shaking off the excess. Then dip it into the beaten eggs, allowing the excess to drip off, and finally coat it in breadcrumbs, pressing gently to adhere.

Fry the Fish
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded seabass fillets and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On the bottom half of each burger bun, place 2 lettuce leaves, followed by a fried seabass fillet. Top with tartar sauce and place the other half of the bun on top.

Serve the crispy fish sandwiches immediately with additional tartar sauce on the side.
