Chicken Pizzaiola

Method

Chicken Pizzaiola

  1. 1

    Prepare the Chicken

Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

  2. 2

    Make the Sauce

In the same skillet, add minced garlic and sauté for 1 minute. Pour in the crushed tomatoes, dried oregano, and dried basil. Stir well and let it simmer for about 10 minutes.

  3. 3

    Combine Chicken and Sauce

Return the cooked chicken to the skillet and spoon the sauce over them. Sprinkle shredded mozzarella cheese on top. Cover and cook for an additional 5 minutes until the cheese is melted.

  4. 4

    Garnish and Serve

Sprinkle chopped parsley over the chicken before serving.

Rice Pilaf

  1. 5

    Cook the Vegetables

In a medium saucepan, heat olive oil over medium heat. Add chopped onion and diced carrot, and sauté until the onion is translucent, about 5 minutes.

  2. 6

    Cook the Rice

Add the rice to the saucepan and toast for 2-3 minutes, stirring constantly. Pour in chicken broth and add salt. Bring to a boil.

  3. 7

    Simmer

Reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.
