1. Prepare the Chicken
Pound the chicken breasts to an even thickness and season with salt and black pepper.
2. Bread the Chicken
Set up a breading station: place flour in one shallow dish, whisk the eggs in another, and place bread crumbs in a third. Dredge each chicken breast in flour, dip in eggs, and then coat with bread crumbs.
3. Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Fry the breaded chicken breasts for about 4-5 minutes on each side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
4. Assemble the Sandwich
Spread mayonnaise on the bottom half of each sandwich bun. Layer with lettuce, sliced tomato, and the fried chicken breast. Top with the other half of the bun.
5. Serve
