Prepare the Breading Station
Set up three shallow bowls: one with flour, second with beaten eggs, and third with panko breadcrumbs mixed with salt and pepper.

Bread the Fish
Coat each branzino fillet in flour, dip into the beaten eggs, and finally coat with the panko breadcrumbs.

Fry the Fish
Heat vegetable oil in a skillet over medium-high heat. Once hot, add the breaded fish fillets and cook for about 3-4 minutes on each side until golden brown and cooked through.

Assemble the Sandwich
Place the fried branzino fillet on the bottom half of each potato roll. Top with tartar sauce and cover with the top half of the roll.

Serve the sandwiches immediately with lemon wedges on the side.
