    Make the Dough

    In a large bowl, mix together flour, sugar, cocoa powder, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in egg yolks and wine (or vinegar) until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Roll Out the Dough

    On a floured surface, roll out the dough until it’s about 1/8 inch thick. Cut into 4-inch circles.

    Fry the Shells

    Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Wrap each dough circle around a cannoli tube and seal the edges with a bit of water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, powdered sugar, vanilla extract, chocolate chips, and cinnamon. Mix until smooth.

    Fill the Cannoli

    Once the shells are cool, carefully remove them from the tubes. Use a piping bag or a spoon to fill each shell with the ricotta filling.

    Serve

    Dust the filled cannoli with powdered sugar before serving. Enjoy your homemade cannoli!
