Brine the Brisket
In a large bowl, mix coarse salt, black pepper, garlic powder, onion powder, coriander seeds, smoked paprika, and brown sugar. Rub this mixture all over the brisket. Place it in a sealed container and refrigerate for 5-7 days to cure.

Smoke the Brisket
After curing, rinse the brisket under cold water and pat dry. Preheat your smoker to 225°F (107°C). Smoke the brisket for 5-6 hours or until it reaches an internal temperature of 190°F (88°C).

Make the Dough
In a bowl, dissolve sugar and yeast in warm water. Let it sit for 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

Knead and Rise
Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover with a cloth, and let rise in a warm place for 1 hour or until doubled in size.

Bake the Bread
Preheat the oven to 375°F (190°C). Shape the dough into a loaf and place it in a greased loaf pan. Let it rise for another 30 minutes. Bake for 30-35 minutes until golden brown.
