Roast the Lamb
Place the rack of lamb in a roasting pan and roast in the preheated oven for 25-30 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from oven and let rest for 10 minutes before slicing.

Prepare the Pommes Sarladaise
While the lamb is roasting, wash and slice the potatoes into thin rounds. In a large skillet, melt the butter over medium heat. Add the sliced potatoes and season with salt and pepper. Cook until the potatoes are golden and tender, about 20-25 minutes, stirring occasionally.
