Cooking Instructions

  1. 1

    Prepare the Vegetables

Peel and chop the celeriac into small cubes. Trim the asparagus and cut it into 1-inch pieces. Dice the onion and mince the garlic.

  2. 2

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional minute.

  3. 3

    Cook the Vegetables

Add the chopped celeriac and asparagus to the pot. Stir well and cook for about 5 minutes.

  4. 4

    Add Broth and Simmer

Pour in the vegetable broth, add salt and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes until the vegetables are tender.

  5. 5

    Blend the Soup

Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, you can blend only half of the soup.

  6. 6

    Finish with Lemon and Parsley

Stir in the lemon juice and chopped fresh parsley. Adjust seasoning with additional salt and pepper if needed.

  7. 7

    Serve

Ladle the soup into bowls and enjoy hot.
