Boil the Eggs

Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat.

Cook the Eggs

Once boiling, cover the saucepan, remove from heat, and let the eggs sit in the hot water for 12-14 minutes.

Cool the Eggs

After the time is up, carefully transfer the eggs to a bowl of ice water. Let them cool for about 5 minutes.

Peel the Eggs

Once cooled, gently tap the eggs on a hard surface and peel off the shells. Rinse under cold water to remove any shell fragments.

Slice the Eggs

Cut each egg in half lengthwise and carefully remove the yolks into a mixing bowl.

Mix the Filling

To the bowl with the yolks, add mayonnaise, Dijon mustard, salt, black pepper, and 1 teaspoon of paprika. Mash everything together until smooth and creamy.

Fill the Egg Whites

Using a spoon or piping bag, fill the hollowed egg whites with the yolk mixture.

Garnishing

Garnish the Eggs

Sprinkle the filled eggs with the remaining paprika and garnish with fresh parsley if desired.
