Rum Tasting Flight (for 4)
Prepare tasting pours
Select four distinct Dominican rums (e.g., white/clear agricole-style, añejo aged, solera or blended, and a spiced or lightly flavored expression). Pour about 1.5 fl oz (approximately 0.25 cups) of each rum into separate tasting glasses so each guest receives one of each style. Arrange glasses in order from lightest to heaviest (typically agricole/white, spiced/solera, añejo, then richest).
Serve filtered water in a small carafe and a few chilled glasses for palate cleansing between rums. Provide sparkling water as an optional chaser for those who prefer to refresh between sips.
Encourage tasting technique: look at color, gently swirl to smell, take a small sip and let the rum coat the mouth, exhale through the nose to note finish. Offer fresh lime wedges if guests want a bright citrus accent between or with a small sip.
On a large wooden board or slate, lay out the cured manchego and sliced soft chèvre in separate zones. Fan the Serrano ham (or local cured ham) and any smoked pork slices beside the cheeses. Keep cheese knives available for the soft cheese.
Place small piles of roasted almonds and pickled pineapple/mango near the cheeses to offer sweet-salty contrast. Add dollops of guava or quince paste next to the manchego and a small bowl of honey with a teaspoon for the soft cheese. Scatter roasted plantain chips and crackers around the board and position bread slices along one edge.
Garnish with fresh lime wedges for guests who want a citrus note with bites. Keep napkins and small tasting spoons accessible. Serve the platter concurrently with the tasting flight so guests can sample pairings between sips.
Aurora Cigar Experience
Cut and light
Demonstrate safe cutting: make a single decisive cut on the cap (leaving about 1–2 mm of cap). Gently toast the foot of the cigar with the flame (without touching) until the foot begins to glow, then draw slowly while finishing the light to achieve an even burn. Encourage gentle puffs; rapid inhalation is not necessary—cigars are not inhaled like cigarettes.
Provide ashtrays and remind guests to tap off ash after 1–2 inches. If guests wish to pause, they can rest the cigar in the ashtray; a well-constructed cigar will relight easily.

Room setup and guest flow
Ensure the Captain’s Lounge is air-conditioned and comfortable, with clear views of Plaza España and the Alcázar de Colón. Position seating so guests can enjoy the vista while maintaining a comfortable distance for smoke and conversation.
Timing and pacing
Present the tasting flight first, with a brief introduction to each rum (origin, age, tasting notes). Allow guests to taste the four rums over the first 20–30 minutes while sampling the shareable bites. Offer cigars after the first round of tastings or when guests indicate readiness; cigars pair well with the richer, aged rums and the spiced/solera expression.
