Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Add the salmon fillets and coat them well with the marinade. Let them marinate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for about 6-8 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Toss the Vegetables

In a large bowl, add the sliced zucchini, diced bell peppers, and trimmed asparagus. Drizzle with olive oil, sprinkle with salt and pepper, and toss until evenly coated.

  2. 5

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Cooking the Rice

  1. 6

    Rinse the Rice

In a fine-mesh strainer, rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch.

  2. 7

    Cook the Rice

In a medium saucepan, combine the rinsed rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Serving

  1. 8

    Plate the Dish

On each plate, serve a portion of rice, top with grilled salmon, and arrange the grilled seasonal vegetables alongside. Optionally, garnish with fresh herbs or lemon wedges.
