Crust Preparation

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for about 8-10 minutes until set. Remove from oven and let cool.

Filling Preparation

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth. Gradually add the granulated sugar and continue to mix until well combined.

    Add sour cream and vanilla

    Add the sour cream and vanilla extract to the cream cheese mixture. Beat until smooth.

    Incorporate eggs

    Add the eggs one at a time, mixing on low speed after each addition just until incorporated. Avoid overmixing.

    Pour into crust

    Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to cool gradually.

    Remove the cheesecake from the oven and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight.

Topping Preparation

    Before serving, wash the fresh mixed berries and pat them dry. In a small bowl, sprinkle the berries with powdered sugar and toss gently to coat.
