Focaccia Preparation

Activate the Yeast
In a small bowl, combine warm water and active dry yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, mix the flour and sea salt. Create a well in the center and pour in the yeast mixture and olive oil. Mix until a sticky dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape the Focaccia
Preheat the wood oven to 450°F (232°C). Once the dough has risen, punch it down and transfer it to a greased baking sheet. Press the dough out into a rectangle or circle, about 1 inch thick.

Add Toppings
Dimple the surface of the dough with your fingers, drizzle with olive oil, sprinkle with fresh rosemary, and add sea salt to taste.

Bake
Place the focaccia in the wood oven and bake for about 20-25 minutes or until golden brown.

Cool and Serve
Remove from the oven, let cool slightly, and serve warm with chianti butter.
