1. Prepare the Marinade
In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Mix well.
2. Marinate the Beef
Rub the marinade onto the beef tenderloin and let it sit for at least 30 minutes at room temperature.
3. Sear the Beef
Heat a skillet over medium-high heat. Add the marinated beef and sear on all sides until browned, about 3-4 minutes per side.
4. Cook the Beef
Transfer the seared beef to a preheated oven at 400°F (200°C) and roast for 15-20 minutes for medium-rare, or until desired doneness.
5. Prepare the Sauce
In the same skillet, add red wine and bring to a simmer, scraping up any browned bits from the bottom. Reduce by half and stir in butter until melted.
6. Sauté the Vegetables
In another pan, sauté mixed vegetables in a bit of olive oil until tender, about 5-7 minutes.
7. Serve
Slice the beef tenderloin and serve with the sautéed vegetables and red wine sauce drizzled over the top.
