White Mushroom Pizza Recipe

    Prepare the Dough

    Preheat your oven to 475°F (245°C). If using store-bought dough, let it sit at room temperature for 30 minutes before stretching.

    Caramelize Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until golden brown and caramelized, about 20 minutes.

    Roast Garlic

    Wrap whole garlic cloves in aluminum foil with a drizzle of olive oil. Roast in the oven for about 20-25 minutes until soft. Squeeze the roasted garlic out of the skins and mash it into a paste.

    Sauté Mushrooms

    In the same skillet used for the onions, add another tablespoon of olive oil and the sliced white mushrooms. Sauté until they release their moisture and are golden brown, about 5-7 minutes. Season with salt, black pepper, and fresh thyme.

    Assemble the Pizza

    Roll out the pizza dough on a floured surface into your desired shape. Spread the roasted garlic paste over the base. Top with caramelized onions, sautéed mushrooms, and shredded fontina cheese.

    Bake the Pizza

    Transfer the pizza to a baking sheet or pizza stone and bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.

    Finish with Saba

    Once out of the oven, drizzle the pizza with saba for added sweetness and depth of flavor. Let cool for a minute, then slice and serve.
