Prepare the crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix together the graham cracker crumbs, 0.5 cups of sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 8-10 minutes, then remove and let cool.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar and continue to beat until well combined. Add the sour cream and vanilla extract, mixing until smooth. Finally, add the eggs one at a time, mixing well after each addition until the batter is creamy and smooth.

Combine and bake
Pour the cream cheese filling over the cooled graham cracker crust. Smooth the top with a spatula. Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

Chill and serve
Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight. Serve with a fruit compote of your choice on top.
