Prepare the Pork Belly
In a bowl, combine the soy sauce, brown sugar, minced garlic, salt, and black pepper. Add the pork belly and marinate for at least 2 hours or overnight in the refrigerator.

Cook the Pork Belly
Preheat the oven to 350°F (175°C). Place the marinated pork belly in a baking dish and cover with foil. Bake for 1.5 to 2 hours until tender. Increase the oven temperature to 400°F (200°C), remove the foil, and bake for an additional 20-30 minutes until caramelized and crispy.

Pickle the Vegetables
In a bowl, combine the julienned carrot and daikon radish. In a separate bowl, mix the rice vinegar and sugar until dissolved. Pour the vinegar mixture over the vegetables and let them sit for at least 30 minutes.

Assemble the Banh Mi
Slice the baguettes lengthwise, leaving one side hinged. Spread a layer of spicy mayo inside. Add slices of the cooked pork belly, then top with the pickled vegetables and fresh cilantro.
