Prepare the Pie Crust
In a mixing bowl, combine the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Gradually add water, mixing until the dough holds together. Divide the dough in half, form into discs, wrap in plastic, and refrigerate for at least 1 hour.

Prepare the Filling
In a large bowl, combine sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are well coated.

Assemble the Pie
Preheat the oven to 425°F (220°C). Roll out one dough disc on a floured surface to fit your pie dish. Place the crust in the dish and fill with the apple mixture. Roll out the second dough disc and place it over the apples. Seal and flute the edges, then cut slits in the top to allow steam to escape.

Bake the Pie
Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until the apples are soft and the crust is golden brown.

Allow the pie to cool slightly before serving warm with a scoop of vanilla ice cream on top.
