    In a saucepan, melt the butter over medium heat. Add the flour and stir continuously for about 2-3 minutes until it forms a roux.

    Add Milk

    Gradually whisk in the milk, ensuring no lumps form. Continue cooking until the mixture thickens, about 5-7 minutes.

    Incorporate Ham

    Finely chop the Ibérico ham and add it to the thickened mixture. Season with salt and black pepper. Mix well and cook for another 2-3 minutes.

    Cool the Mixture

    Transfer the mixture to a bowl and cover it with plastic wrap, pressing the wrap directly onto the surface to prevent a skin from forming. Allow it to cool completely in the refrigerator for at least 2 hours.

    Once the mixture is chilled, scoop out small portions and shape them into cylinders or balls.

    Coat the Croquettes

    In one bowl, beat the egg. In another bowl, place the bread crumbs. Dip each croquette in egg, then roll in bread crumbs to coat well.
