Cooking Instructions

  1. 1

    Prepare the Branzino

Clean the wild-caught branzino and pat it dry. Season the fish inside and out with salt and black pepper.

  2. 2

    Grill the Fish

Preheat the grill to medium-high heat. Drizzle olive oil over the branzino and grill for about 5-7 minutes on each side, or until the fish is cooked through and has nice grill marks.

  3. 3

    Prepare the Salad

Dice the avocado and segment the grapefruit. In a bowl, combine the avocado and grapefruit segments. Add a drizzle of olive oil and lemon juice, and season with salt and pepper to taste.

  4. 4

    Toast the Pine Nuts

In a dry skillet over medium heat, toast the pine nuts until golden and fragrant, about 3-5 minutes. Stir frequently to prevent burning.

  5. 5

    Make the Warm Mayonnaise Foam

In a small saucepan, gently heat the mayonnaise over low heat until warm. If a foam is desired, you can use an immersion blender to aerate it slightly.

  6. 6

    Plate the Dish

Serve the grilled branzino on a plate, topped with the avocado and grapefruit salad, sprinkled with toasted pine nuts. Drizzle warm mayonnaise foam over the top.
