    Rinse the fresh anchovies under cold water. Carefully remove the heads and guts. Open them up and fillet them, then rinse again and pat dry with paper towels.

    In a mixing bowl, combine water and sea salt. Stir until the salt dissolves completely, creating a brine solution.

    Soak the Anchovies

    Place the filleted anchovies in the brine, ensuring they are fully submerged. Cover the bowl and refrigerate for about 2 hours.

    Prepare the Pickling Solution

    In a separate bowl, mix together the white wine vinegar, crushed garlic cloves, and chopped fresh parsley.

    Pickle the Anchovies

    After 2 hours, drain the brine from the anchovies. Place the anchovies in a clean jar and pour the pickling solution over them, ensuring they are fully covered.
