Cleaning the Anchovies
Rinse the fresh anchovies under cold water to remove any impurities. Carefully remove the heads and guts from each anchovy, then rinse them again gently.

Salting the Anchovies
In a bowl, layer the cleaned anchovies with sea salt. Ensure that each anchovy is well coated with salt. Cover the bowl and let them cure in the refrigerator for 24 to 48 hours.

Rinsing and Drying
After the curing period, remove the anchovies from the salt and rinse them under cold water to remove excess salt. Pat them dry with paper towels.

Storing in Olive Oil
In a clean glass jar, layer the anchovies and cover them completely with extra virgin olive oil. Seal the jar tightly and store it in the refrigerator.
