    Measure and heat water

    Heat 96 oz (12 cups) of fresh water to just off boil, about 200°F (93°C). If using an electric kettle with temperature control, set to 200°F. If you don't have a thermometer, bring to a boil and let sit 30 seconds.

    Prepare coffee grounds

    Measure 12 tablespoons (about 3/4 cup) of Colectivo ground coffee (medium-coarse). This quantity yields a strong-to-medium strength for 96 oz; adjust by 1–2 tablespoons for weaker or stronger brew.

    Brew using drip or pour-over (preferred for large batches)

    If using a commercial drip maker: place a large paper filter in the basket, add the 12 tbs grounds, pour the 96 oz of hot water into the reservoir and start the brew cycle. If using a large pour-over or manual method: place grounds in the filter, bloom with about 12–16 oz of hot water and wait 30–45 seconds, then slowly pour remaining water in even spirals until you reach 96 oz.

    Alternate French press method (if no commercial equipment)

    Use two 48-oz French presses or several smaller ones. Add half the grounds and half the hot water to each press, stir gently, steep 4 minutes, then plunge and combine the brewed coffee into the insulated dispenser.

    Transfer to insulated dispenser

    Immediately pour the brewed 96 oz of coffee into the large thermal carafe or insulated dispenser to preserve heat and freshness. Avoid leaving brewed coffee on hotplate for long periods to prevent burnt taste.

    Prepare milk and cream options

    Place whole milk (16 oz), half-and-half (8 oz), and non-dairy creamer (8 oz) in small pitchers or labeled containers and keep refrigerated until service. If serving outdoors or without refrigeration, keep containers in an iced cooler and replace frequently.

    Sweeteners and syrups

    Provide granulated sugar (8 tsp in a bowl with spoon), simple syrup (4 oz in a pour bottle), and sweetener packets (10). Label options for guests. Simple syrup mixes into hot coffee more easily; offer both.

    Set up service station

    Place the insulated dispenser on a stable surface with the spout facing forward. Arrange disposable cups and lids nearby, along with stir sticks and napkins. Label milk/cream choices and sweeteners. If possible, place a small tray for lid disposal and used stirrers.

    Dispensing and maintaining temperature

    When guests serve themselves, keep the dispenser closed between uses to hold heat. If coffee will be served longer than 2 hours, brew in shorter batches and swap to fresh brewed to avoid stale bitterness. Refill or replace milk containers as needed and keep extras chilled.

    Portion guidance

    A 12–16 oz cup per person yields 8–10 servings from 96 oz. For smaller cups (8 oz), expect up to 12 servings. Adjust expectations and supply more cups or coffee accordingly.
