Prepare Fruit

    Wash and dry

    Rinse all berries gently in a colander under cold running water. Spread them on a clean kitchen towel or paper towels and pat dry carefully to remove excess moisture. Handle raspberries and blackberries gently to avoid crushing.

    Hull and quarter strawberries

    Remove stems from the strawberries and slice each berry into quarters (halve very small berries). Place the prepared strawberries in a large mixing bowl.

    Add blueberries, raspberries and blackberries to the bowl with strawberries, keeping all fruit in one bowl for tossing.

Dress & Sweeten

    Add citrus and sugar

    Sprinkle the lemon zest and pour the lemon juice over the mixed berries. Add the granulated sugar (or caster sugar). The sugar will macerate the fruit slightly and bring out juices and sweetness.

    Toss gently

    Using a large spoon or spatula, toss the berries gently but thoroughly to distribute the lemon, zest, and sugar. Toss just until combined — avoid overmixing to keep berries intact. Let the mixture rest for 5 to 10 minutes at room temperature so the sugar dissolves and the fruit yields a little juice.

    Adjust sweetness

    Taste and, if desired, stir in the optional honey or maple syrup by drizzling it over the berries and folding gently. Adjust sugar by adding up to 1 additional tablespoon if you prefer sweeter fruit or if berries are particularly tart.

    Add mint and garnish

    Tear or chiffonade the fresh mint leaves and fold them into the berries right before serving to preserve flavor and color. If using, sprinkle the optional finely grated orange or lemon zest for extra aroma.

    Serve the berries chilled or at cool room temperature. For à la carte presentation, portion about 3/4 to 1 cup per serving into individual bowls. Offer accompaniments on the side: a dollop (about 1/4 cup) of Greek yogurt or crème fraîche and a small sprinkle (~1 tbsp) of toasted almonds or granola for texture.
