Roasted Garlic Aioli

Method

Prepare the Fries

    Cut the Potatoes

    Wash and peel the Russet potatoes, then cut them into evenly sized strips for frying.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Drain and dry the potatoes thoroughly. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes.

    Season with Truffle Oil

    Remove the fries from the oil, drain on paper towels, and immediately toss with truffle oil, salt, and black pepper. Sprinkle with grated Parmesan cheese while hot.

Make the Roasted Garlic Aioli

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil and roast for 30-35 minutes until soft.

    Blend the Aioli

    In a bowl, combine the roasted garlic, mayonnaise, lemon juice, olive oil, salt, and black pepper. Blend until smooth.
