Roasted Garlic Aioli

Method

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into even-sized sticks or wedges.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

    Season and Serve

    Remove the fries from the oil and drain on paper towels. While hot, drizzle with truffle oil, sprinkle with salt, and toss with grated Parmesan cheese. Serve immediately.

Roasted Garlic Aioli

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil. Roast for 30-35 minutes until soft and fragrant.

    Make the Aioli

    In a bowl, mash the roasted garlic cloves. Add mayonnaise, lemon juice, salt, and black pepper. Mix until smooth and well combined.

    Serve

    Transfer the aioli to a serving bowl and enjoy alongside the truffled French fries.
