Method
Prepare the Risotto

Add the Rice
Stir in the Arborio rice, cooking for 1-2 minutes until the rice is lightly toasted.

Deglaze with Champagne
Pour in the champagne or sparkling wine, stirring until absorbed.

Add Broth Gradually
Begin adding the broth one ladle at a time, stirring frequently until each addition is absorbed before adding the next.

Finish with Shrimp and Cheese
Once the rice is creamy and al dente, stir in the shrimp and cook until they turn pink. Remove from heat and stir in the Parmesan cheese.

Season the Fish
Season the sable fish fillets with salt and black pepper on both sides.

Make the Sauce
In a saucepan, melt the butter over medium heat. Add shallots and sauté until translucent. Add capers and parsley, then deglaze with white wine and lemon juice, cooking until slightly reduced.
Plate the Dish

On a plate, serve a portion of champagne shrimp risotto topped with the seared sable fish and drizzled with the caper, parsley, white wine butter sauce.
