Season and Sear the Fish
Season the BC sable fish fillets with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Once hot, add the fish fillets skin-side down and sear for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until the fish is cooked through. Remove from heat and keep warm.

Make the Bisque
In a saucepan, melt butter over medium heat. Add chopped onion and minced garlic, sautéing until softened. Stir in tomato paste and cook for 1-2 minutes. Add shrimp and fish stock, bringing to a simmer. Cook for 10 minutes, then blend until smooth. Stir in heavy cream, cayenne pepper, salt, and black pepper. Heat through and adjust seasoning if necessary.
Lemon Basmati Rice Preparation

Cook the Rice
In a pot, combine basmati rice, water, salt, lemon juice, and lemon zest. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork before serving.
