Method
Poaching the Pears

Prepare the Poaching Liquid
In a medium saucepan, fill with enough water to cover the pears. Add a splash of white balsamic vinegar and a pinch of salt. Bring to a gentle simmer.

Poach the Pears
Carefully add the whole pears to the simmering water. Poach for about 15-20 minutes or until the pears are tender but still firm. Remove from heat and let them cool in the poaching liquid.
Assembling the Salad

Prepare the Greens
In a large bowl, combine the chopped radicchio and arugula with the thinly sliced red onion.

Make the Vinaigrette
In a small bowl, whisk together the white balsamic vinegar, olive oil, honey, salt, and black pepper until well combined.

Combine and Serve
Slice the poached pears and arrange them on top of the greens. Drizzle the vinaigrette over the salad and top with toasted walnuts. Toss gently and serve immediately.
