Poaching the Pears

    Prepare the Poaching Liquid

    In a saucepan, combine water, white sugar, cinnamon stick, and vanilla extract. Bring to a simmer over medium heat, stirring until sugar dissolves.

    Poach the Pears

    Add the peeled Okanagan pears to the simmering poaching liquid and reduce heat to low. Cover and simmer for 15-20 minutes, or until pears are tender. Remove from heat and let the pears cool in the liquid.

Preparing the Salad

    Make the Vinaigrette

    In a small bowl, whisk together white balsamic vinegar, olive oil, honey, salt, and pepper until well combined.

    Assemble the Salad

    In a large bowl, combine arugula, radicchio, and walnuts. Crumble goat cheese over the top and drizzle with the vinaigrette. Toss gently to combine.

Serving

    Plate and Enjoy

    Slice the poached pears and serve them on top of the salad. Drizzle with additional vinaigrette if desired.
