Prepare the Mushroom Ragu

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

Deglaze with Wine
Pour in the white wine and let it simmer for 3-4 minutes, allowing the alcohol to evaporate.

Add Cream and Herbs
Stir in the heavy cream, chopped thyme, and parsley. Season with salt and black pepper. Let it simmer for an additional 5 minutes until slightly thickened.
Prepare the Puff Pastry

Preheat Oven
Preheat your oven to 200°C (400°F).

Roll Out Pastry
On a lightly floured surface, roll out the puff pastry sheets and cut them into desired shapes.

Bake the Pastry
Place the pastry on a baking sheet lined with parchment paper and bake for 15-20 minutes until puffed and golden brown.
Serve

Plate the Dish
Once the puff pastry is baked, spoon the mushroom ragu over the pastry and serve hot.
