    Prepare the Broth

    In a large pot, heat olive oil over medium heat. Add diced onion and red bell pepper, sautéing until softened, about 5 minutes. Stir in minced garlic and cook for another minute.

    Add Tomatoes and Seasonings

    Pour in the fire roasted tomatoes and vegetable broth. Add dried oregano, thyme, salt, and black pepper. Bring the mixture to a simmer, allowing it to cook for about 10 minutes to blend the flavors.

    Cook the Seafood

    Add the prawns, scallops, cod, mussels, and clams to the pot. Cover and cook for 5-7 minutes, or until the seafood is fully cooked and the mussels and clams have opened.

    Finish and Serve

    Stir in chopped fresh parsley. Serve hot, with lemon wedges on the side for squeezing over the cioppino.
