Make the Dough
In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add a little more flour as needed.

Shape the Gnocchi
Divide the dough into smaller portions. Roll each portion into a long rope, about 3/4 inch thick. Cut into 1-inch pieces and use a fork to create grooves.

Add Tomatoes
Add canned whole tomatoes, breaking them up with a spoon. Season with salt and black pepper. Bring to a simmer and cook for 20 minutes, stirring occasionally.

Finish with Basil
Stir in fresh basil leaves and cook for an additional 5 minutes. Remove from heat.
Cooking the Gnocchi

Boil the Gnocchi
Bring a large pot of salted water to a boil. Drop in the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

Combine with Sauce
Add the cooked gnocchi to the pomodoro sauce, tossing gently to coat.
Serving

Serve the gnocchi topped with grated Grana Padano cheese and fresh basil leaves.
