Preparing the Beef Tenderloin

Season the Beef
Season the beef tenderloin with salt and black pepper on all sides.

Rest the Beef
Remove the beef from the heat and let it rest for 5 minutes before slicing.
Making the Black Garlic Demi-Glaze

Prepare the Ingredients
In a saucepan, combine black garlic, beef stock, and red wine.

Bring to a boil, then reduce the heat and let it simmer until reduced by half.

Stir in butter and thyme until melted and well combined.
Making Horseradish Mashed Potatoes

Cook the Potatoes
Peel and chop potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

Drain and return potatoes to the pot. Add butter, heavy cream, prepared horseradish, salt, and black pepper. Mash until smooth.
