Method

Duck Liver Pâté Preparation

    Sauté the Aromatics

    In a skillet over medium heat, melt 50g of butter and add the shallots and garlic. Sauté until softened and translucent, about 5 minutes.

    Cook the Duck Liver

    Increase the heat and add the duck liver. Cook for about 5 minutes until just browned. Add the cognac and thyme, and cook for another 2 minutes.

    Blend the Mixture

    Transfer the mixture to a food processor. Add the remaining butter, heavy cream, salt, and pepper. Blend until smooth and creamy.

    Chill the Pâté

    Transfer to a terrine or small dish, cover, and refrigerate for at least 4 hours or until set.

Crostini Preparation

    Prepare the Baguette

    Preheat the oven to 180°C (350°F). Brush the baguette slices with olive oil and sprinkle lightly with salt.

    Bake the Crostinis

    Arrange the slices on a baking sheet and bake for 8-10 minutes, or until golden and crisp.

Red Onion Jam Preparation

    Cook the Onions

    In a saucepan, combine the sliced red onions, brown sugar, balsamic vinegar, salt, and pepper. Cook over medium heat, stirring occasionally until the onions are soft and caramelized, about 20 minutes.
