Braised Lamb Chuck

    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Season lamb chuck with salt and pepper, then sear on all sides until browned. Remove the lamb and set aside.

    Sauté Vegetables

    In the same pot, add onion, carrots, and garlic. Sauté until soft, about 5 minutes.

    Deglaze the Pot

    Pour in red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for 2-3 minutes.

    Braise the Lamb

    Return the seared lamb to the pot, add beef stock, rosemary, and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for 2-3 hours or until tender.

Roasted Rack of Lamb

    Prepare the Rack

    Preheat the oven to 400°F (200°C). Rub the rack of lamb with olive oil, minced garlic, thyme, salt, and pepper.

    Roast the Lamb

    Place the rack in a roasting pan and roast in the preheated oven for 25-30 minutes for medium-rare. Let it rest for 10 minutes before slicing.

Black Garlic Demi-Glace Sauce

    Make the Sauce

    In a saucepan over medium heat, combine black garlic, beef stock, and red wine. Simmer until reduced by half. Stir in butter and season with salt and pepper to taste.
