Preparation

    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and peel the potatoes. Cut them into bite-sized cubes, approximately 1-inch in size.

    Season the Potatoes

    In a large bowl, toss the potato cubes with olive oil, salt, and black pepper until evenly coated.

    Bake the Potatoes

    Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

Assembly

    Prepare the Aioli

    In a small bowl, mix the mayonnaise and Calabrian chili paste until well combined. Adjust seasoning with salt if necessary.

    Assemble the Sandwich

    Once the potatoes are done, place two slices of provolone cheese on one slice of bread. Spread a generous amount of the Calabrian aioli over the cheese, then add another slice of bread on top.

    Grill the Sandwich

    Heat a skillet over medium heat. Add a little olive oil to the pan, then place the assembled sandwich in the skillet. Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.

    Serve

    Remove the sandwich from the skillet and let it cool slightly. Cut it in half and serve alongside the crispy potatoes. Garnish with fresh parsley.
