Preheat your oven to 200°C (400°F). Peel the carrots and cut them into even-sized sticks, about 1 inch thick each. This ensures they roast evenly.

In a bowl, combine the truffle oil, mascarpone cheese, honey, salt, and black pepper. Mix well until you have a smooth dressing.

Chop the pecans roughly and finely chop the fresh parsley. Set aside for later use.
