Panna Cotta Base Preparation

Dissolve Gelatin
In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes to bloom.

Combine Cream and Milk
In a medium saucepan over medium heat, combine heavy cream, whole milk, and granulated sugar. Stir until the sugar is dissolved and the mixture is hot but not boiling.

Add Gelatin and Vanilla
Remove the saucepan from heat. Stir in the bloomed gelatin and vanilla extract until completely dissolved.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow them to cool to room temperature before refrigerating.

Chill
Refrigerate the panna cotta for at least 4 hours or until set.
Berry Compote Preparation

Cook Berries
In a saucepan, combine the mixed berries, granulated sugar, and lemon juice over medium heat.

Simmer
Cook until the berries start to break down and the mixture thickens slightly, about 10 minutes. Stir occasionally.

Cool
Remove from heat and let the compote cool. Once cooled, it can be refrigerated if not used immediately.
Serving

Serve Panna Cotta
Once the panna cotta is set, carefully remove from molds if necessary. Top with berry compote before serving.
