Prepare the salmon
Rinse the salmon fillets under cold water and pat them dry with paper towels. Season both sides of the salmon with salt and black pepper.

Prepare aromatics
Peel the garlic cloves and smash them lightly with the side of a knife. Slice the lemon into thin rounds.
Cooking

Heat the olive oil
In a large, deep skillet or saucepan, pour in the olive oil and add the smashed garlic, lemon zest, thyme (or rosemary), and lemon slices. Heat the oil over low to medium-low heat until it's warm but not bubbling, about 5 minutes.

Poach the salmon
Carefully place the seasoned salmon fillets in the warm oil, skin side down. Cook gently for about 15-20 minutes, or until the salmon is opaque and flakes easily with a fork. Adjust the heat to ensure the oil remains warm but not hot.

Using a slotted spatula, carefully remove the poached salmon from the oil and transfer it to a plate lined with paper towels to drain any excess oil.
