Method

Preparing the Red Sauce

    Saute Garlic

    In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, sugar, and crushed red pepper flakes.

    Simmer the Sauce

    Bring the sauce to a simmer and reduce heat to low. Let it cook uncovered for 20-25 minutes, stirring occasionally until it thickens.

Preparing the Toppings and Sides

    Grate the Cheese

    While the sauce simmers, grate the Parmigiano-Reggiano and set aside.

    Prepare Focaccia or Potatoes

    If using house focaccia, slice it into pieces. If using crispy potatoes, wash, peel (if desired), and cut them into wedges. Roast or fry until golden and crispy.

Serving the Dish

    Combine and Serve

    Once the sauce has thickened, remove from heat. Serve the sauce in bowls, topped with grated Parmigiano-Reggiano. Add house focaccia or crispy potatoes on the side.
