Preparing the Squash and Bread

    Roast the Butternut Squash

    Preheat the oven to 400°F (200°C). Peel and cube the butternut squash into 1-inch pieces. Toss the squash with 1 tablespoon of olive oil, salt, and black pepper. Spread it on a baking sheet in a single layer and roast for 25-30 minutes until tender and caramelized, stirring halfway through.

    Prepare the French Bread

    While the squash is roasting, cube the French bread into 1-inch pieces. In a separate bowl, toss the bread with a little olive oil and a pinch of salt. Spread the bread cubes on another baking sheet and toast in the oven for about 10-15 minutes, until golden brown and crunchy, stirring halfway.

Making the Dressing

    In a small bowl, whisk together 1 tablespoon of extra virgin olive oil, 2 tablespoons of balsamic vinegar, 1 teaspoon of maple syrup, 0.5 teaspoons of salt, and 0.5 teaspoons of black pepper until well combined.

Assembling the Salad

    In a large bowl, combine the roasted butternut squash, toasted French bread, arugula, and sliced red onion. Drizzle the dressing over the salad and gently toss to combine.
