    Wash the Collard Greens

    Fill a large bowl with cold water. Submerge the collard greens and gently agitate to remove any dirt or grit. Remove the greens from the water, allowing the dirt to settle at the bottom. Rinse the greens under cold running water and set aside.

    Chop the Collard Greens

    Remove the tough stems from the collard greens. Stack the leaves, roll them tightly, and slice them into 1-inch wide strips.

    Prepare the Aromatics

    Peel and finely chop the garlic cloves. Peel and dice the onion.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add the chopped collard greens to the pot. Stir to combine with the onion and garlic. Cook for about 5 minutes, stirring occasionally, until the greens begin to wilt.

    Once the collard greens are tender, remove the pot from heat and stir in the lemon juice. Taste and adjust seasoning if necessary.
