Chocolate Budino Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place over a pot of simmering water (double boiler) until melted and smooth. Remove from heat and let cool slightly.

    Whisk Eggs and Sugar

    In a separate bowl, whisk together the granulated sugar and eggs until pale and fluffy.

    Combine Mixtures

    Gradually add the melted chocolate mixture to the egg mixture, stirring continuously to prevent cooking the eggs.

    Add Milk and Season

    Slowly stir in the whole milk and sea salt until fully incorporated. Pour the mixture into individual ramekins or a large dish.

    Bake

    Place the ramekins in a baking dish filled with hot water (bain-marie) and bake in a preheated oven at 160°C (320°F) for about 40-45 minutes, or until set but still slightly jiggly in the center.

    Cool

    Once baked, remove from the oven and let cool to room temperature. Refrigerate for at least 2 hours before serving.

Tomato Orange Caramel Preparation

    Prepare Tomatoes

    Blanch the ripe tomatoes in boiling water for 1 minute then transfer to an ice bath. Peel and chop into small pieces.

    Make Caramel

    In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves and turns a golden color. Add chopped tomatoes and orange juice, stirring well.

    Simmer

    Allow the mixture to simmer for about 15-20 minutes until thickened. Blend until smooth and strain if desired.

Bacon and Garnish Preparation

    Cook Bacon

    In a skillet, cook the jowl bacon over medium heat until crispy. Drain on paper towels and chop into small pieces.

    Toast Pecans

    In the same skillet, toast the pecans over low heat until fragrant, about 5 minutes. Remove and chop coarsely.

    Prepare Whipped Cream

    Whip the heavy cream until soft peaks form. Keep refrigerated until ready to serve.

Plating

    Assemble the Dish

    To serve, place a portion of the chocolate budino on a plate. Drizzle with tomato orange caramel, sprinkle with crispy bacon and chopped pecans, and top with a dollop of whipped cream. Finish with a drizzle of extra virgin olive oil.
